A couple of weeks ago, when McDonald’s was giving out their coffee for free, a colleague and I were acquiring some of said free coffee at a McD’s near our office when I noticed a sign indicating that Shamrock Shakes were back! So I got all excited and squeed about said Shamrock Shakes and my colleague was all “WTF is a Shamrock Shake?”. So I told her all about the joy that is the minty delicious bright green shake that brings me back to my childhood and she agreed that this sounded like something that she just *had* to try and so we agreed that we would return to said McD’s on St. Patrick’s Day to get ourselves some Shamrock Shake deliciousness.
Just as tasty as I remembered them.
The other day I tweeted that I needed an Irish recipe for a St. Patrick’s Day potluck, as my office does a potluck for holidays. I wanted to do something Irish as we don’t have many people of Irish descent in my office and I felt the need to represent. My Aunty Barbara came to the rescue with a recipe for potato cakes that my maternal grandma used to make! They are like scones, but not as dry because they are made with mashed potatoes.
As it turns out, I’m not even going to be at my office today as I have to be at a visioning session in Abbotsford all day, something I hadn’t remembered when the potluck discussions were going on in the lunchroom last week. But that didn’t stop me from trying out the recipe!
Here’s the dough rolled out:
The orange stuff is cheddar cheese and the darker stuff is potato skin (because I leave the skin on my potatoes when I mash them).

I may have tested a piece of the one on the bottom left of that photo. And they aren’t very well browned because I’m not yet used to my new oven. So while they don’t look that great, they tasted awesome!

I’m celebrating today by eating a variety of green foods: spinach salad, edamame and olives stuffed with jalapeño peppers. I know, I’m a party animal.
