Dinner

I was in the mood to cook something new today, but had the damndest time trying to figure out what I wanted to make.  I searched through tonnes of vegetarian recipes online, but none of them really caught me.  In the end, I decided just to try a new veggie burger recipe, my tried and tested oven fries (on which I put fresh rosemary from Tod’s new balcony garden ((we went over to a friend’s place for dinner last week and they had an awesome patio garden, which inspired us, so we started a herb garden on T’s balcony) )), and stir-fried pineapple ((props to Dr. Jen for introducing me to the Post Punk Kitchen, the source of the stir-fried pineapple recipe! And a few other things that I think I’ll want to try at some point)). Despite making a grocery list after I decided what to make, I somehow managed to forget to put fresh ginger, a chili pepper and cumin on my list, so I had to improvise a bit, putting sage, celery salt & black pepper in the burgers and putting toasted sesame seeds into the pineapple stirfry.

Dinner

It all turned out pretty delicious, which is really all that matters!

    You inspired me to quickly whip up a “raw” batch of these using the leftover black beans from my nacho dinner tonight. They are now in the freezer, awaiting a night when I don’t feel like cooking (I suspect there will be many of those once baby arrives).

    I only had about 3/4 of a can of beans left so I made 3 patties. And I didn’t have a green bell pepper so I used a large jalapeno (minus seeds) and left out the chili powder and hot sauce. And I didn’t have breadcrumbs so I crushed up some Ritz crackers… Hopefully all of my substitutions haven’t made them inedible. 🙂

  • Great idea to make them up and freeze them! I’m sure crushed crackers and jalapeno will be totally tasty! Let me know how they are once you eat them!

  • That all looks amazing! I love fresh herbs! We made pizza a couple days ago with fresh basil straight out of our garden. I also tn think the toasted sesame seeds sound better with the pineapple than cumin.
